Camp Fires and Camp Cooking

Culinary Hints for the Soldier

by Captain James M. Sanderson

Written by a commissary officer and distributed to Union troops in January 1862, this short pamphlet teaches men with no kitchen experience to turn issued rations (salt pork, beef, beans, rice, desiccated vegetables, flour) into decent meals over open fires, including bread in the portable field oven.

It is a compact lesson in feeding many people from basic stores with simple equipment. See camp cooking.
